Achaval Ferrer “Quimera,” Part III: The Barrel

Yes, there is a part III! I’ll actually be ending off the trilogy with a barrel tasting, which, I hope, will only show just how good of a wine the Quimera is–hence, why it deserves 3 parts!

This is the Quimera blend that will be released in 2010. I tried it in the summer of 2009. Since it was not fully developed yet, it didn’t have much aroma and was on the acidic and bitter side, with extremely prominent, wild tannins.

There is already a hint of aroma—fruity, but small. It obviously burns, given the high acidity to it. Still, it is surprising that this wine goes down smoothly. Its future elegance is already apparent. Spicy overtones are also apparent. Very bitter, overshadowing other flavors, but that is largely due to the barrel.
