Valrhona’s Description of the Bar: Floral and Oaky
The presentation of the bar is very simple, clean, and professional. Black wrapping, black box, chocolate in the shape of a large, thin square. It’s the same as the other Valrhona bars (refer to Tanariva bar).
The bar is very intense. It has a nice melt, especially for a dark chocolate, largely because it’s so thin. It’s rather long, too, leaving a nice residue over the mouth as it melts. The dark chocolate flavor of the bar is rather intense, though monotonous, as that intensity largely interferes with any overtones the bar might have. As Valrhona itself says, the bar does have some floral and oaky notes, but the flavors are too weak to really pick up easily. To be fair, the bar is weak on flavor at first, but it ends on a high note, as the palate picks up much more flavor as you savor the bar.
