Valrhona’s Description of the Bar: Fruity and Intense
The presentation of the bar is very simple, clean, and professional. Black wrapping, black box, chocolate in the shape of a large, thin square. It’s the same as the other Valrhona bars (refer to Tanariva bar).
This bar has a nice flavor profile to it, much more so than the Valrhona Alpaco I recently reviewed. Very intense dark chocolate flavor here, too, but it is balanced with stronger, fruity overtones, especially of blackberries and sour cherries. There’s also some heavy nuttiness to the bar, like a hazelnut flavor, which is quite refreshing. Its melt, like that of all of Valrhona’s bars, is again excellent, largely due to the thinness of the bar. In fact, for a dark chocolate, this bar is downright creamy. That creaminess leaves quite a long, bitter and fruity aftertaste. Very nice.
